Abstract

Nisin is a natural antimicrobial peptide produced by Lactococcus lactis, which effectively inhibits Gram-positive and Gram-negative bacteria. It has been the most widely used as antibacterial agent in food processing. This review focuses on the essential information and its application of hope to provide a good reference for its application.
