Abstract

Vinegar egg-juice is a traditional food,which has rehabilitation,prevention,treatment with three way integration function.In this paper vinegar soaking process, soaking conditions, general nutritional composition and free amino acids and inorganic element analysis of Vinegar egg-juice, the vinegar egg-juice health and pharmacological functions were reviewed, points out the problems in the development of vinegar egg-juice, and gives suggestions.
