Abstract

Studying the reductive ability, ·OH, H2O2, NO2-, O2-· free radical scavenging ability and antioxidant activity of polyphones from pomegranate seeds can provide the evidence for its exploitation and utilization. Within a certain range of concentrations, polyphone from pomegranate seed showed strong scavenging capacities to ·OH, H2O2, NO2-, O2-·free radical and the effect was enhanced with the increment of concentration, and the scavenging rate was 83.93%, 29.73%, 98.27% and 97.92%, respectively. The POV value of the treated group which added polyphone was obviously lower than that of the control group. It indicated that polyphone of pomegranate seed has antioxidant effect on rap oil.
