Isolation, identification and detection methods for floc-producing bacteria in vinegar

Abstract

By liquid enrichment culture, plate counting and streak cultivation, combined with reproducibility test, flocculent strains were isolated from vinegar, initially identified as Gluconobacter spp. Orthogonal experiment of the detection method was carried out, and the optimum medium for test was the potato liquid medium with glucose 3g/100 mL, pH 6.0, and temperature 28℃.
