Fermentation conditions of Saccharomyces cerevisiae

Abstract

Using the medium screened in the early stage, the optimal fermentation conditions of Saccharomyces cerevisiae were optimized by single factor experiment and orthogonal experiment. The optimized culture conditions were temperature 26 ℃, rotate speed 150 r/min, initial pH 5.5, incubation time 36 h, inoculum 4%, fluid volume 20 ml/100 ml. Under the optimal condition, the OD560nm was 1.370, yeast density was 1.54×108 CFU/ml, the dry cell weight reached 18.48 g/L, which was nearly 10% more than the initial condition.
