In order to obtain the excellent lactic acid bacteria used for industrialization, a strain with high thermotolerance was isolated from silage, apple pomace, milk and fresh pickles from the different regions. Using the thermotolerant lactic acid bacteria as the original strain and He-Ne laser as the mutagen, To optimize the laser mutagenesis conditions, the thermotolerant, aciduric and heredity potential of the mutant were tested. When the wavelength was 632.8nm, the laser power was 10mW and the irradiation time was 15min, a mutant with the thermotolerant and aciduric capability was obtained. The number of the mutant was 9.4 times than that of the original strain in the temperature 70℃. The number of bacteria increased to 15.56×108u/ml. The pH value was 3.42 finally. The mutant had the steady heredity.
