分别以重庆市不同海拔高度采收的4个品种的脐橙(福本、纽荷尔、奉园72-1、圆虹)为原料酿造脐橙酒,从脐橙汁、脐橙酒的理化指标、脐橙酒的香气化合物及感官质量等方面考察不同海拔高度和不同品种脐橙对其酿酒特性的影响。结果表明,4个品种脐橙出汁率均>60%,糖度均>11°Bx,pH在3.09~3.85;高海拔区域的4种脐橙酒均表现出了良好的酿酒特性,在香气和感官分析上花香、果香更明显。福本脐橙酒特征香气化合物主要为癸酸乙酯、D-柠檬烯;纽荷尔脐橙酒的特征香气化合物主要为芳樟醇、辛酸;圆虹脐橙酒特征香气化合物主要为乙酸异戊酯、1-癸醇和萜品醇;奉园72-1脐橙酒特征香气化合物主要为癸酸乙酯、香茅醇和D-柠檬烯。感官分析结果表明,奉园72-1和福本脐橙酒获得了更高的得分,表现出较好的香气和细腻的口感。综上,高海拔区域的奉园72-1和福本更适宜酿酒。
Abstract
Navel orange wines were brewed using four varieties of navel oranges (Fukumoto, Newhall, Fengyuan 72-1, and Yuanhong) harvested at different altitudes in Chongqing as raw materials. The effects of different altitudes and varieties of navel oranges on the brewing characteristics were investigated from the physicochemical indexes of navel orange juice and navel orange wine, as well as the aroma compounds and sensory quality of navel orange wine. The results showed that the juice yield of the 4 varieties of navel oranges was more than 60%, the sugar content was more than 11 °Bx, and the pH was 3.09-3.85. The 4 navel orange wines in the high-altitude region showed good brewing characteristics, and the floral and fruity flavors were more obvious in aroma and sensory analysis. The characteristic aroma compounds of Fukuamoto navel orange wine were mainly ethyl caprate and D-limonene. The characteristic aroma compounds of Newhall navel orange wine were mainly linalool and caprylic acid. The characteristic aroma compounds of Yuanhong navel orange wine were mainly isoamyl acetate, 1-decyl alcohol and terpenol. The characteristic aroma compounds of Fengyuan 72-1 navel orange wine were mainly ethyl caprate, citronellol and D-limonene. The results of sensory analysis showed that Fengyuan 72-1 and Fukumoto navel orange wines obtained higher scores, showing better aroma and delicate taste. To sum up, Fengyuan 72-1 and Fukumoto in the high-altitude area were more suitable for wine brewing.
